Christmas baking – Shortbread cookies

I’m back again with another simple, yet sweet, baking post. Enjoy! 🙂

To get in the festive mood, a friend/fellow blogger and I decided to have an impromptu baking day. You can also check out his blog , if you want to read some interesting posts! 

Now, back to the task at hand. Having bought the cutest cookie cutters, I decided to opt for a simple shortbread recipe. They tasted amazing and although I didn’t have time to decorate them fully, I think they looked pretty great too.

Now, let’s get baking.



125g/40z butter

55g/ 20z caster sugar, plus extra for sprinkling on top.

180g/ 60z plain flour 


Beat the butter and sugar together until smooth.

Stir in the flour until smooth.

Place onto a flat surface and gently roll until about 1cm thick.

Use any cookie cutter of your choice and place cookies on a floured baking tray.

Sprinkle caster sugar on top and chill cookies in the fridge for 20 minutes.

Bake in the oven for 15-20 minutes at 190c/375F/Gas 5*

*Note – Due to the shape of my cookies, the edges started to burn slightly after baking for 15 minutes. I would definitely recommend checking them regularly until light golden brown.
